Where's the Green????

I was looking for a dessert dish to make and take to the  ladies group at church.  And the first thing that came to mind was Cocoa Mint Brownies.  They are so yummy and they have a little green in them so it goes with the month of March and St Patty's Day, Going Green and all.  I couldn't remember where I first got this recipe but it's bascially a brownie recipe with mints melted on top.  I knew of a brownie recipe  that I have used before from "Betty Crocker's Best Baking Cookbook".

Basic ingredients, sugar, eggs, butter, cocoa etc. (receipe will follow) and
Andes Mints are what make this recipe!

I thru it all in my trusty kichen aid mixer...

After mixing it all up, pour it into a greased 9X13" greased pan...and bake for 20-25 minutes.
While the Brownies are baking unwrap the mints.


As soon as  the brownies come out of the oven, pipping hot,... place the mints on top.

Then cover the top with a cookies sheet or foil for about 5-10 minutes..


And Voila.. the mints are melted and will swirl easily on top...Let them set up about an hour or serve warm.  Yummmmmmmmy!

And Where's the Green, you ask?????
I was asking mysefl the same thing...these mints used to have green centers and now there is no coloring,
 I guess they are cream colored now....Bummer!!!!

Anyway they tasted delicious... and the idea of having the mint still made you think Green.

Cocoa  Mint Brownies
2 C sugar
1 C butter
2 tps. vanilla
4 eggs
1C & 1/3 C flour
1/2 C Cocoa
1 tsp baking powder
1/4 tsp salt
1/2 C chocolate Chips
2 Pkgs Andes Mints
Mix well and bake at 350* for 20 -25 min.
When brownies come out of the oven, place  Andes Mints on top and cover til melted approx 5-10 min.
Swirl and speard mints across top...let cool.
Enjoy!!
